Short description of error
Knife tool often creates double geometry in cut areas. Sometimes doesn't even finish the cut properly. When you zoom in during cutting and move cursor out of the model it moves the cut point to 0,0,0 location.

Indeed, Knife tool seems to perform worse with extreme wide angle view points, as in your file. Unsure how to triage.

I can too reproduce this if I zoom in during cutting with that file.

Trying to handle this report in regards to multiple issues mentioned here:

  • the "during cutting and move cursor out of the model it moves the cut point to 0,0,0 location" issue is a duplicate of T65585 (even though this report is slightly older, we have a distinct report in T65585 which is good)
  • the "bad geometry" is also reported in T62285 (not as good as here, but still we have a distinct report which is good)

So while this is a good report, I will close this as duplicate, lets continue discussion in the particular tasks (I will will mention this report there specifically...)
