I'm on a mac using rc3 and cmd+z is working. Did you accidentally change the keymap? I am sort of new to Blender perhaps there are some procedures that can't be undone. What did you try to undo?

I went to the keymap
and saw it actually has the cmd+z filled in
so I deleted the content and filled it again
and it worked :)
