Exact steps for others to reproduce the error

  • Have layout with 3D Viewport, Image editor in "Paint" mode and another Image editor in "View" mode used for references and color-picking.
  • Choose an unwrapped object and switch to "Texture Paint" mode
  • second image editor window's image is switched to the texture and a gray UV layout is added which you (seemingly) can't turn off

You can turn UV overlay off by unchecking View->Display Texture Paint UV's

This behavior is consistent with 2.79 so I don't think there is any bug here.
