Short description of error
When deleting things from the mesh, you have to do your movement then undo to actually get it to not screw up UVs.

Steps to reproduce
It's hard to say because of the circumestances this is used in so here is a video. This bug isn't all that important to get fixed because you get around it quite fast.

In the video, I dissolve and add edge loops. When I move the existing edge loops, the UVS don't break, but when I remove the ones I don't need, it screws the UVs until I undo and do the motion again.

This sound a whole lot like T81060: Vertex Slide and Loop Cut and Slide tools breaks the UVs and Vertex Colors after topology changes [new or deleted] (if CustomSplitNormals are present)
(it is kind of hard to tell without having access to your example .blend file)

This should be fixed already, see rBaafd71a8a160: Fix T81060: CustomData Correction sometimes breaks UVs and Vertex Colors.
Could you please check if a fresh build from https://builder.blender.org/download/ fixes it for you?

Beware though: the fix actually introduced other issues, see T81865, T81860, a fix for these is already in review (D9278)
