The RTX 3070 does not show up in the OpenCL area as it is prefered that you use CUDA or OptiX on a Nvidia GPU as they generally offer a wider range of features and generally better performance. Please use CUDA or OptiX.

MANY THANKS! I switched to Optix and the GPU compute does not grey out. But now I can't see anything under the render preview mode. I wonder why this happens?

@Alaska (Alaska) is correct, Blender uses either CUDA or OptiX for Nvidia GPUs. The OpenCL option is only available for AMD GPUs, as explained in Blender's manual. The reason nothing shows up, is because you've paused the rendering (play button in the top right corner of the right 3D view).
