Short description of error
When using the geometry node, the shader doesn't work if the mesh is converted from a volume.
If the geometry node modifier is applied, which makes the animations disappear, the shader is applied.
Exact steps for others to reproduce the error
1 - Set shader on the default cube
2 - Use geometry node
3 - Add "points to volume" node
4 - Add "Volume to mesh" node
You will see the shader is not applied anymore.
