@Germano Cavalcante (mano-wii) Today I did some tests with currently available Blender versions.
In 2.93.6 and 2.93.7 Candidate the problem persists, but only on my connected external display (1.920 x 1.080, no Mac OS scaling). On the internal display of my MacBook Air M1 it work's perfectly fine now. Cool!
And in 3.0.0 Beta and 3.1.0 Alpha the problem is completely solved, when I change the resolution scale in the Blender display settings to 1.23. Then it works on any screen. 1.28 works too, but nothing in between and not 1. You can see the difference in realtime during you tweak the resolution scale, while having the image editor open. I can't imagine why this is, but I'm glad there is a workaround.

I have the same issue with my Surface Pro 7 with Intel i7-1065G7 CPU, 16 GB Ram, Windows 10 and Intel Iris Plus Graphics.
