I just tried Blender version 2.91 Alpha.
The bug is corrected in this version.
Now it works!

Sorry, I couldn't answer before ...
I just downloaded today's version (blender-2.83.3-windows64 - 27/07/2020).
The problem persists in the same way as at the beginning.
I have tried on different cubes and edges, with a free cut shape with the Knife tool ...
