After reloading the factory settings and redefined my presets in a new startup file, the problem has disapeared.
Even by reloading old files, I was not able to reproduce the problem.

I've produced the problem many times by enabling/disabling the MB Lab add-on. Aftrer restarting Blender, I was not able to get the Principled BSDF att all.

@Brecht Van Lommel (brecht): I agree. Templates are not UI. And I understand now that you are rather searching for the best "hard-coded" default settings for most users which is a different subject.
